Spicy Crab Endive Bites
Spring is really here. Daffodil faces are shining, the magnolias are just starting to bloom, and it’s been raining cats and dogs every other day. If only the weather would warm juuuust a tad more … I’ll cry if the magnolias freeze again this year!
With springtime vibes comes out my party plannin’ side. It’s my way of welcoming the changing seasons and, honestly, I’ll welcome any excuse to host an intimate gathering with my favorites close by.
Parties don’t have to be a lot of work … a few finger foods, a specialty cocktail, and a couple of designated pieces of party decor is all it takes to design something special. We’ll start with one of my favorite finger foods today: spicy crab endive bites.
There’s nothing grouchy about these crabby amuse-bouches, but they do pack a punch. The sriracha and jalapeño add a spicy kick (and can easily be adjusted to taste), while the endive leaves and mustard seeds crank up on the crunch.
In 15 minutes or less, you’ll have yourself one delectably easy appetizer recipe that’ll, without a doubt, pretty your springtime party.
Spicy Crab Endive Bites
Makes 20-24 single servings
Ingredients
12 oz. lump crab meat
4 tbsp. mayo
3 tsp. thyme, reserve 1 tsp. for garnish
2 tbsp. jalapeño, diced
2 tsp. mustard seed
2 tsp. Sriracha
salt
Kitchen Tools
Chef’s Knife
Medium Mixing Bowl
Wooden Spoon
Can Opener
Serving Plate
1. Cut off base of endives. Peel off leaves and place onto a serving plate. Lightly salt. In a mixing bowl, combine crab meat, mayo, thyme, jalapeño, mustard seeds and sriracha. Mix thoroughly. Spoon crab mixture into endive leaves. Garnish lightly with thyme.
2. Refrigerate for one hour. Serve cold.
