I hope you are all having a nice summer!
I am not sure it is normal to get this excited over ingredients.
But I do, especially in the summer.
What is not to love about collecting
colorful, fragrant & pretty
goodies from the garden.
These are just a few of my favorites to
collect & of course cook with:).
I thought I would share one of the “best” summer time
recipes, according to my 7yr old.
And an added bonus, it’s healthy!
Summer Lemon Herb Zucchini Penne Alfredo
4tbs olive oil
2 lemons squeezed
1tsp lemon zest
3-4 pressed & chopped garlic cloves
2-3 medium chopped zucchini
1 tbs rosemary chopped
salt & pepper to taste
1 cup of grated parmesan
16 oz chicken or vegetable broth
5 chopped or shredded basil leaves
1tbs grated or shredded fresh parmesan
In large pan add olive oil, garlic & zucchini.
Cook on low for about 10 minutes
then add lemon juice, lemon zest
& rosemary.
Keep on low-med for another 5 minutes.
Add broth, parmesan, salt & pepper
and bring to a boil.
Reduce heat to low, keep stirring.
Boil & strain your penne.
Pour alfredo over penne
&
add fresh parmesan and top with
fresh chopped basil.
Enjoy!

You didn’t say how much pasta you need or how many it serves. But it smells delicious.
I’ve made this twice now and both times my Parmesan cheese clumps up. Why does it do that?
