Roasted Pear & Rosemary Potato Fritter Harvest Salad-Taste of Seasons

Today I am sharing the most delicious recipe,
Roasted Pear & Rosemary Potato Fritter Harvest Salad With Honey Goat Cheese Dressing,
yumm!
When my hubby & I met he was living {& working hard} in Aspen, CO.
I was in NY, so it was quite a distance:).
That summer we met I was lucky enough to visit Aspen often and how magical it was!
It is the most beautiful place!
The air is so clean and fresh & the skies are the bluest BLUE you have ever seen.
We would bike most of the day{no car}, stop for our picnics and at night hit some of the town’s incredible restaurants.
And this was my favorite thing to order at our favorite place….
{this is my own version with a FALL twist}
Rosemary Potato Fritters
4 cups of shredded potatoes
1/2 cup of parmesan cheese
2 whisked eggs
salt & pepper to taste
2tbs chopped rosemary
2tbs fresh lemon juice
2 gloves garlic
EV olive oil
********
Mix
Layer pan with EVOO and heat on medium with garlic
scoop your fritter mixture into pan
heat until brown on both sides
Honey Goat Cheese Dressing
4 ounce goat cheese
1/8 cup water
4tbs EVOO
1 1/2tbs honey
salt & pepper
Roasted Pears
Slice and toss with a drizzle of honey and EVOO
salt & pepper{optional}
bake at 350 for 40 minutes
{these are also GREAT with vanilla bean ice cream}
Harvest Salad
Layer your Potato Fritter with some greens.
Top with dried cranberries & roasted pears.
Drizzle your Honey Goat Cheese Dressing
&
garnish with chopped mint{optional}
This is a hearty & healthy fall meal, side dish or starter.
